![]() Moots CabernetMoots Cabernet ~ 25th Anniversary ~ Jewel-like deep ruby color. Ripe and savory aromas of cinnamon, plum, pipe tobacco and vanilla. Bright and fruity on the palate, chewy, but with a silky texture and deep flavors.Technical Information Vintage Notes: Balmy days in March got the season off to a quick start, but unusually cold, rainy weather in April slowed things down. Once it got warm again in May, however, the vines grew very fast and vigorously, requiring more canopy management and shoot thinning than customary. Rapid vegetative growth reduced crop levels slightly. After a couple of hot spells at the end of May and the first part of June, summer was mostly mild, allowing steady maturation of fruit, until the hot weather returned in mid-September to help us achieve the last bit of ripening. Winemaking Notes: Average harvest sugar of 24.3° Brix. Warm fermentation was followed by extended time on the skins, in order to encourage the formation of smooth tannins, for a total of 18 days on the skins. The wine was in barrel for a month longer than two years, developing complexity. Of the oak used, 70 percent was French and 30 percent American; 20 percent were new barrels. Analysis: Alcohol, 14.3 percent; titratable acidity, 6.14 grams per liter; pH, 3.68; volatile acidity, 0.67 grams per liter; residual sugar, dry.
