Silverado’s Soda Creek Ranch Olive Oil was featured in the June 15, 2003 issue of the Wine Spectator. Both maturity and youthfulness are pivotal factors in olive oil. The age of the trees is important; those at least 10 years old produce oils that are bit smoother, rounder, and more balanced. Some California olive oils may seem somewhat tannic, peppery, sharper, and fruitier than European oils, due to the age of the trees.
